Ever go to a thai restaurant and wonder how on earth they make such an incredible peanut sauce to go to with satay chicken or thai prawns?
I have many a times tried to recreate peanut sauces with a variety of weird methods I have found on google. Including the use of apricot jam and hoisin sauce!!
However turns out it is really quite simple to get a basic peanut sauce with basic ingredients in your cupboard.
I recommend a decent peanut butter such as the Whole Earth crunchy PB, as well a sweet chilli sauce, Blue Dragon is pretty good. You’ll also need boiling water, a lime, optional chilli flakes and seasoning (salt and pepper).
Add half a jar (approx 3 tbsp) of the peanut butter and 4 tbsp of boiling water into a bowl, stir in 1 tbsp of sweet chilli sauce and the juice of half a lime as well as your seasoning – adding more or less to taste. Stir together and leave for 15-20 minutes stirring occasionally. Add more water for a thinner consistency.
and THAT is it! I literally ate it straight out the bowl as it was so tasty!
The sauce is great for serving as a dip for a variety of meats or vegetables or as an added sauce to a peanut curry.
